Savory Dish: Sweet Potato and Vegetable Soup

I am an avid soup lover and as the years go by, I become more and more acquainted with several ingredients that can work really well in them. Soups are easy to make and can therefore be prepared in a minimum of time, using very little ingredients, left in the fridge. When I was a kid, soups weren't really my cup of tea but while growing up and moving out, I realized how I missed home cooked meals. And there is nothing more home-like, than a warm, soothing soup, when returning home from a hard (and rainy) day.


This soup recipe is written by me and is my favorite of all times since it can be made using any ingredients you have on hand. There are many alternatives to it and that is really what makes it fun! Hope you enjoy making it, as much as eating it!

 (serves 6-8, as a starter or main dish)
Ingredients:
2 litres chicken or vegetable stock
1 large white onion
1/2 clove of garlic, smashed
2 large carrots, peeled
2 sweet red potatoes (500 gr), peeled
3-4 potatoes, peeled
1-2 small  zucchinis
1/2 tsp black pepper
1/2 tsp Indian curry
1/2 tsp cumin
1 tsp tomato paste
a handful of button mushrooms, chopped finely
parsley
Greek yogurt

Getting to it:
1. In a large pot, saute the onion and garlic until golden in two tablespoons of olive oil. Add in the chicken stock.
2. Cut in cubes all the vegetables (potatoes, carrots, zucchinis). Add them in the stock. Add tomato paste, cumin, Indian curry, pepper and bring to a boil.
3. Let the soup boil until all the vegetables are cooked through completely.
4. In the last minute, add the chopped mushrooms. Let them cook for 5-8 minutes, then remove from the heat.
5. Leave the soup in the pot to cool slightly before processing.
6. Pour the soup in the food processor and blend away. The soup will become pretty shiny and will have the thickness of cream. You may need to fill up the food processor for a few times to make the whole soup.
7. Serve with a dollop of Greek yogurt and some chopped parsley.

 Chilly Friday nights must consist of: spiced pumpkin cupcakes, board games, "blankies" (I am a "Jess" girl) chai tea latte, a warm and cozy sofa, Paper Kites' new album Woodland and a Woody Allen's film. IF I had to choose to say something I have learned so far that would be it, end of story. The soothing smell of ginger and cinnamon coming out of the oven, the warm lights and the hot chai tea, along with the blanket, can make anything go away. Well, not anything, but still...

Having no time to spend on myself during the week I find it frustrating that I have to catch up with everything on the weekend. That's why I choose to believe weekend starts on Fridays. So, here is a recipe to make the silly thoughts and ghosts go away. A MUST try, on weekend for sure!

Pumpkin Cupcakes with Cream Cheese Frosting for Chilly Fridays
(makes about 12 cupcakes)

For the sponge:

1 cup sugar
1 cup all purpose flour
1/3 cup vegetable oil
2 eggs
1/2 tsp vanilla extract
3/4 cup pumpkin puree (I used a store-bought but you can use fresh)
1+1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1/3 tsp ground allspice
1/3 tsp ground ginger 
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

For the frosting:

4 oz cream cheese, at room temperature
2 tbsp unsalted butter, at room temperature
1 to 2 tbsp milk
2 cups powdered sugar

How to:

  • for the cakes

1. In a large bowl, cream together the sugar, vegetable oil, vanilla extract, eggs and pumpkin puree until combined.
2. Add the dry ingredients: flour, spices, baking soda and baking powder.
3. Mix until everything is incorporated but not too much, as the batter will thicken and the sponge will turn out stiff and not fluffy and airy.
3. Prepare you cupcake tray with the paper tins and preheat oven at 180 C.
4. With an ice cream scoop, fill the tins about 2/3 of the way with the batter.
5. Bake for about 20-25 minutes, or until a skewer or toothpick is inserted at the center of a cake and comes out clean. Leave to cool completely before frosting.

  • for the frosting

1. In a large bowl, cream together the butter, cream cheese, vanilla and powdered sugar. Whisk until everything is combined.
2. Add the milk and whisk again.
3. Cover with a plastic wrap and leave to cool for at least one hour before use. This will thicken the frosting and make it easier to spread.

Frost cupcakes and sprinkle with fresh grounded cinnamon. Leave to cool at the fridge for an hour.

I must say that the kitchen is one of my most loved rooms in my apartment. This is were everything happens, to sugary delights, dinners, chit chats with friends while preparing something. My bf got me this amazing electric mixer for my 20th birthday! It is my first  freestanding electric mixer and it is huuuge, I mean it needs its own special room.... Can't wait to use it in many more recipes!
I've also got a great passion about paper cases and cake tins. It gets absolutely crazy in my kitchen when I open all the little drawers and metal boxes, where I store them.

 One of the most satisfying things to do on a Sunday afternoon is to look through my favorite cookbooks  and decide on a little recipe... I then hide inside my pink kitchen and bake. The whole house gets cosy and smells amazing... 
Reading books, watching tv series tucked under warm blankets or having a warm beverage at home with friends, makes an ideal Sunday evening...

Here are some snaps we took yesterday while baking a "cutie" apple pie! More photos and details soon, since I am making a little homemade video!

Savory Dish: nids de tartiflette // cheese and potato nests

φαγητάκι βαρύ, θυμίζει starter που θα έτρωγες σε american diner παρέα με κοακόλα... τα χει όλα τα καλούδια του, τυριά λιωμένα, μπέικον και πατάτες... το αγαπάς, γιατι γεμίζει ευχαρίστηση και παρηγοριά τις σκληρές μέρες του διαβάσματος...

δοκίμασέ το με πράσινη σαλάτα, για να εξισορροπήσεις τα λιπαρά ή με μια πιο υγιεινή εκδοχή, αντικαθιστώντας το reblochon (εδω βάλαμε cheddar) με μανούρι ή φέτα και το μπεΐκον με ψητή γαλοπούλα... για άλλη μια φορά, συνταγή της Rachel Khoo...


Υλικά

1 κουταλιά της σούπας μαλακό βούτυρο // 500γρ πατάτες // 1 κρεμμύδι, ψιλοκομμένο // 1 σκελίδα σκόρδο, ψιλοκομμένη // 1 φύλλο δάφνης // 200γρ καπνιστό μπέικον, κομμένο σε κύβους  //  100ml λευκό ξηρό κρασί // 250 γρ τυρί Reblochon ή Brie ή cheddar, κομμένο σε κύβους

Εκτέλεση 
Προθερμαίνουμε το φούρνο στους 180 και βουτυρώνουμε μια φόρμα για 6 μάφιν, με το βουτυράκι.

Καθαρίζουμε τις πατάτες και τις κόβουμε σε στικς. Τιπ: για να πετύχετε πολύ λεπτά στικς χρησιμοποιήστε μαντολίνο, αλλιώς  κόβετε τις πατάτες κάθετα σε λεπτές ροδέλες και στη συνέχεια κόβετε σε λεπτά στικς. Θα πάρει λίγη ώρα αλλα το αποτέλεσμα αξίζει!

Ρίχνουμε το κρεμμύδι στο τηγάνι, μαζί με το σκόρδο, το ψιλοκομμένο μπέικον και το φύλλο δάφνης και τα τσιγαρίζουμε σε λίγο λάδι, μέχρι το μπέικον να χρυσαφίσει. Σβήνουμε με το λευκό κρασί και το αφήνουμε να μαγειρευτεί μέχρι να απορροφηθούν τα υγρά και να μέινουν μόνο 1-2 κουταλιές της σούπας απο αυτά.

Βγάζουμε το φύλλο δάφνης και σβήνουμε τη φωτιά. Ρίχνουμε τα στικ πατάτας μέσα στο τηγάνι και αμέσως, ρίχνουμε όλο το μείγμα σε ένα μεγάλο μπόλ. Προσθέτουμε το κομμένο τυρί και ανακατεύουμε.

Χωρίζουμε το μείγμα στις έξι θήκες του ταψιού για μάφιν και ψήνουμε στο φούρνο για 15-20 λεπτά ή μέχρι να χρυσαφίσουν και να βγάζουν φουσκάλες! (μιαμ)


Απλώστε το πιο όμορφο τραπεζομάντηλο στο μπαλκόνι σας και απολαύστε το πιο λαχταριστό μεσημεριανό, όσο έχει ακόμη ήλιο και δροσιά...

Hello readers, or whatever is left from you!
I know i haven't been the best blogger in the world this year but i promise i'll make it up to you. My results finally came out and they are pretty good. However, not that good to keep me in my hometown. I will be moving to another little city in Greece to study to be a kindergarten teacher! For more details and further information about that i'll be posting on August so stay tuned.
I have so many ideas for my home, I'm spending time on the IKEA catalogue, I'm browsing design sites and little shops that take care of old furniture and appliances and make them vintage and fashionable! It is fun, although it would be more fun if we did have a little more money! Mom is optimistic and officially now my interior decorator! She is excited with the whole "Home From the Beginning" project! Not that I blame her, I am too!
All I know is that I gotta buy a washing machine! I have already figured everything else. I have planned for our old fridge smth really cool: there is a shop where you can choose a big collage of everything; from movie stars, singers, models etc. and cover the fridge with that! How cool is that? I already chose Audrey Hepburn so, she will be baking cupcakes with me at my new home.

 I have been praying for a SMEG refrigerator for the last 3 years. If i stop eating for a few months i can probably afford it.

This attic bed is a dream. Yes it is and I know i'll never find a house with smth like that. It's such a shame, really
 I am really into this white IKEA bed which is really cheap given the fact that is gorgeous!!! Can't wait to get that!

 I really hope I didn't bore you with my post! This whole thing is really new to me and I am feeling a bit weird. I am not used to the idea that I'll have to leave home and start a new life from the beginning. It is weird but I'll get used to it. How many of you have done this? How did it feel?
